Where it comes from
Finca La Colina, the Herrera family
A third-generation farm on a steep limestone slope, picked by the same crew every year.
The Herrera family farm sits where dry winds from the Mexican plateau keep the slope free of frost. Their Bourbon trees are older than most of our team.
We have bought this lot for three harvests. Each year Ana Herrera sends us a few kilos of the next one to try before we commit.
